- Soak glass noodles in hot water for 3-5 minutes and drain.
- Cut the cucumber, carrots and peppers into fine strips and mix with the noodles.
- Mix a dressing of sesame oil, soy sauce, lime juice, garlic and a little sugar.
- Mix everything well and sprinkle with roasted sesame seeds.
